I love these Vegan Blueberry Donuts! Instead of being fried, these donuts are baked. You can also make these into muffins, but I like the donuts personally better. Also, I recommend you use a donut pan for your donuts. I hope you like this recipe a lot and Enjoy!
Vegan Blueberry Donuts Ingredients
- 1/3 of Vegan Butter (Earth Balance)
- 1 Cup Raw Cane Sugar
- Pinch of Salt
- 1 tsp. Vanilla Extract
- 3 Cups All Purpose Flour
- 1 tsp. Baking Soda
- 2 tsp. Baking Powder
- 3 Tablespoons Flax seed
- 9 Tablespoons Water
- 2 Cups Blueberries (Fresh or Frozen)
- 1 Cup Almond Milk
Vegan Blueberry Donuts Recipe
STEP 1: Add 3 tablespoons of flax seed and 9 tablespoons of water into a small bowl then mix together. Let it sit for 5 minutes before continuing.
STEP 2: Vigorously (I use an electric hand mixer) mix together the vegan butter and raw cane sugar. Then mix in the flax seed and water from Step 1 along with the vanilla and a pinch of salt.
STEP 3: Get a large bowl and whisk together the flour, baking soda, and baking powder.
STEP 4: Interchange adding the flour mixture and the 1 cup of almond milk, till there is none of the ingredients left.
STEP 5: Add the 2 cups of blueberries and mix them in. Bake in the oven for 15-20 minutes.
